Hello – I am a Senior Talent Acquisition Manager at Dell Technologies based in New England. I'm married and have three boys. My passion for cooking came from my mom. I loved it when she would cook and get the house smelling wonderful. Since my wife doesn’t enjoy cooking, I took on that responsibility and the tradition of good smells in the house. I want my boys to experience what I did as a child.

  

The Story Behind the Dish: Chicken Fricassee

This dish comes from my nana, who was an Italian immigrant. She passed it on to my mom, who passed it on to me. It remains one of my family’s favorite dishes. Every time I make it, it triggers great family memories. Let's keep the tradition going!

The dish, Chicken Fricassee.

Chicken Fricassee Instructions

1. Brown some skin on chicken thighs, then set aside.

  

2. Add some oil and chopped celery, onions, carrots (I added peppers, but optional) to the pot you browned the chicken in. Cook until fragrant, then add garlic and a bay leaf.

  

3. Return chicken to the pot and add chicken broth or Veggie broth. I usually use 2-3 cups, but add enough to cover everything in the pot.

  

4. Bring to a boil, then switch to simmer and let the aroma fill the house.

  

5. As your cooking, add the spices along the way (i.e. salt and pepper, sometimes I use paprika as well). Whatever spices you like (i.e. thyme, oregano etc...) have fun with it.

  

6. I usually let simmer for 1 hour, sometimes longer. The chicken should be fall-off-the-bone tender when ready.
